Pinterest is a place of wonder. People “pin” things to virtual boards– pictures of anything on the web that inspires them. Personally, I’m partial to all the delicious food out there. It’s a great way to stumble upon blogs you’ve never seen before.
Recently, one of my friends pinned this recipe for Peanut Butter Cup Caramel Corn. I knew that it would have to be something I made for Christmas this year.
This popcorn is awesome.
It doesn’t actually contain peanut butter cups, just the same flavors.
A couple things I would note:
I made my own popcorn, following the 1/2 cup of kernels recommendation, and I got 16 cups of popcorn– not the 20 the recipe called for. I didn’t feel like making more, or figuring out what 4/5 of the rest of the recipe would be, so I kept all the other measurements the same. It turned out just fine.
I found that the peanuts don’t stick in with the rest of the popcorn very well, so I would suggest stirring the peanuts in during the last 15 minutes of baking. I think that would get them stuck to the rest of the popcorn better without baking them too much.
I personally think you could take this over the top by sprinkling a little bit of sea salt over the top of the chocolate. But that’s just me, and I happen to love sweet & salty combos. ;)
Now all that’s left is to package it up in adorable tins and give it to the special people in your life.
This is some seriously dangerous stuff. It’s so good. It reminds me a lot of Poppycock, which is always a good thing. My dad often would buy my mom Poppycock for Christmas. So this recipe is just perfect for this time of year. Make it for you & yours!
